Teflon is the trade name for polytetrafluoroethylene (PTFE), the slippery coating applied to non-stick cookware. Most people know it as the surface that lets an egg slide out without oil, but far fewer know that not all Teflon-coated pans are made equal, and that buying the wrong one for your kitchen means replacing it within a year. This checklist walks you through every practical checkpoint before you spend money, from coating thickness to hob compatibility to the one habit that ruins even the best pan.

Quick answer: Before buying any Teflon non-stick pan, confirm the coating layer count, the base material, the handle heat rating, and whether the coating carries a PFOA-free certification. If you cook daily, prioritise base thickness and layer count over brand name.

Stage 1: Understand What Teflon Actually Is

PTFE coating on its own is considered safe at normal cooking temperatures. The concern that circulated for years was about PFOA, a processing chemical used in older manufacturing. Reputable brands phased out PFOA well over a decade ago, and PFOA-free labelling on packaging is now standard for quality cookware. Still worth checking, especially on heavily discounted or unbranded pans.

The coating sits on top of the base metal, it is not the pan itself. This distinction matters because the durability of the non-stick surface depends as much on what is underneath it as on the coating layers themselves.   1. Confirm PFOA-free and layer count. Three or more layers for daily cooking. No named PFOA-free certification is a reason to choose a different pan.
  2. Check induction compatibility with a magnet or the hob symbols on the box. This is a non-recoverable mismatch if you get it wrong.
