6 large eggs

2 tbsp mayonnaise

1 tsp sesame oil

1 tsp light soy sauce

½ tsp sambal oelek

1 tsp lime juice

¼ tsp sugar

2 tbsp finely chopped green onion

1 tbsp chopped coriander (cilantro leaves) 

A pinch of salt

Garnish: a sprinkle of white or black sesame seeds, and a small slice of chilli (optional)


Instructions:

  • Place eggs in a single layer in a saucepan. Cover with enough water [Tip: There should be at least 1 ½ inches above the eggs]. Heat on high until the water begins to boil, then cover to turn the heat low, and cook for 1 minute.
  • Remove eggs from heat and leave covered for 14 minutes before rinsing them in cold water. Rinse it continuously for 1 minute.
  • Carefully peel the eggs under cold running water.
  • Slice the eggs lengthwise. Remove the yolks and place them in an icing bowl. Mash yolks with a fork and add mayonnaise, sesame oil, soy sauce, sambal oelek, lime juice, sugar, green onion, coriander and a pinch of salt. Mix well.
  • Evenly spread the yolk mixture into the egg whites with a spoon. You can also use piping bags for this.
